Ingredients

    • 1 pound sweet potato, peeled
    • ½ pound boneless, skinless chicken breasts, sliced into strips
    • 2 eggs, beaten
    • 3 tbsp olive oil
    • 3 green onions, sliced
    • 2 garlic cloves, minced
    • ¼ tsp roasted cashew nuts, chopped
    • 2 tbsp chopped cilantro
    • 1 lime, juiced
    • 3 tbsp raw honey
    • 2 tbsp Coconut Aminos
    • 2 tbsp paleo approved fish sauce
    • 1 tsp chili flakes
    • salt, black pepper to taste

Directions

  1. Spiralize sweet potatoes into noodles.
  2. In a small bowl, mix lime juice, Coconut aminos, fish sauce, chili flakes, and honey. Set aside.
  3. In a pan, heat 1 tablespoon of olive oil over a medium heat.
  4. Add in sweet potato noodles and season with a pinch of salt and pepper.
  5. Cover and cook for 5 minutes, stirring occasionally, until noodles are soft.
  6. Remove the noodles and set aside.
  7. In the same pan, heat 1 tablespoon of olive oil over medium heat.
  8. Add the eggs and cook, scrambling with a wooden spoon until cooked. Set aside.
  9. In a pan, add the remaining oil and heat it over medium heat.
  10. Add chicken and cook for 5 minutes, stirring, until it is thoroughly cooked and no longer pink.
  11. Add onion and garlic and cook for a minute, until soft.
  12. In the pan, transfer sweet potato noodles and scrambled eggs, then stir.
  13. Add half of the chopped cashew nuts and the mixture of lime juice and Coconut aminos and
  14. cook for 5 minutes or until thickened.
  15. Remove from the heat, add chopped cilantro and the remaining cashew nuts and toss to combine.
  16. Season with salt and pepper to taste and serve.
